Top tip for frying fish!Sea Bass , just bought from Blackburn Market, and buttered potatoes.
Interestingly I asked the staff at that market stall for a way to stop sea bass sticking to the frying pan so that it looks good when serving rather than the broken up mess of fish and skin that I usually end up with. The proprietor and the lady who works there gave suggestions but the younger man who works there said "ignore those two, I'm chef trained", he then told me to cut a sheet grease proof into the size of the pan add oil and fry on that. Perfect result and now I can serve fish at a dinner party with confidence.
